Sabrina's Breakfast
(March 2018 Newsletter, Recipe)Wake-me-Up!Sabrina’s Healthy BreakfastYou’ll need:Avocado OilWaterBlack and Cayenne PepperOreganoVarious veggies1-2 eggsThe veggies I use varies from week-to-week. Last week I used some leftover Riced Cauliflower and Arugula. Sometimes I use a Cole Slaw mix of shredded cabbage and carrots or other combinations of ‘Cole Slaw’ mixes. (Message me for the other veggies I use)Start with a hand full of chopped or shredded veggies in a frying pan, add a little water (for steaming)Turn on fire to a medium/low and cover veggies. Wait about 5 minutes.Carefully remove lid (watch out for the steam) stir veggies and leave uncovered for another few minutes (until most of the water has boiled out)-Veggies should be fairly tender by now-Add Avocado Oil to pan and stir veggies to coat.Grind in some Black pepper, Cayenne, and Oregano (to taste)note: if you like other seasonings you may add them now or omit any I suggested…Cook the veggies until they are tender, slightly crispy or caramelized-Yum! It’s now turning into a veggie hash!!-You have choices here; you can remove the veggies once they’re cooked to your liking or if your pan is large enough, push them aside (just to keep them warm)Add 1 or 2 eggs, you may need a touch more Avocado oil? (so the eggs don’t stick)I enjoy my eggs over easy or medium, but you may choose to scramble them- totally up to you!Cook those eggs to your liking and then serve!Scoop veggies onto plate into a bed, then top with your eggs.Finally take a picture for social media (LOL) but don’t take too long, your food is getting cold!Once you’ve posted pics of your glorious meal, leave your phone in the other room to eliminate distractions, then savor each bite of deliciousness!
