Simple Recipes for Summertime!

Watermelon for the WIN!

Here’s some of my simple clean recipes I use for my own healthy eating. Most of these can be made in summertime or anytime, but do your best to use the freshest in-season ingredients.

If you have a headache in the summertime it's probably due to dehydration or even low magnesium. Drinking watermelon juice or eating some fresh watermelon can give you the hydration your body needs to give you some pain relief. 

Here's another health tip!

You can also make a refreshing spinach salad and serve with homemade ginger dressing for a cool refreshing lunch or dinner side. How about cook up some spinach with garlic and avocado oil as a side dish. There's lots of magnesium in fresh spinach. Even better and more nutritious, pick fresh greens your grow from your own outdoor garden or #towergarden

Warning: ⚠ I have to tell you when I cook I don’t usually measure so you’ll have to take these measurements with a grain of salt… (Ha! See what I did there? LOL)  I use recipes as an inspiration for cooking, not an exact, unless I'm baking that’s a different story. Ok, well… Have fun and enjoy the health benefits of my simple recipe ideas! Thanks! 

Ginger Dressing (can serve 1-3)

  • 1 cup EVOO

  • ¼  cup (or less depending on how tangy you like it) Apple Cider Vinegar or the juice of 1 lemon. Include the zest too!

  • 1-2 Tbsp. of brown mustard

  • 1 Tbsp. of honey or ¼ tsp or less of liquid stevia (stevia has an interesting taste so beware)

  • A few dashes of italian seasoning

  • 1 Fresh grated garlic clove or a dash of garlic powder

  • Small chunk of fresh ginger, peeled and finely chopped/pressed or a few hefty dashes of dried ginger powder

  • S & P to taste

Directions:

  • Add all ingredients to a bowl or shaker cup and whisk until emulsified 

  • Pour onto salad, toss to coat. Some like it well dressed, for others a simple coating will do.

  • Store in the fridge for a week or two… but I’m sure it won’t last that long. 

Side note! I am known for my “Sabrina Salad’s” 😎 I suggest you take it from me when you want a good salad or fresh homemade salad dressing. Whenever I go to a party or get together I bring a big fun salad that everyone loves. I’ll give you a few of my secrets but not all of them… The key is to mix the greens and veggies together but not the dressing because it wilts the greens too quickly. Plus you’ll be able to save the leftovers for another day. And someone might want some other subpar dressing if they’re being silly. To each their own, I do not judge, I simply want to share the love of a great fresh salad. 

Spinach Salad (serves 1)

  • 1 large handful of organic spinach washed and chopped. Or a homegrown spinach (it’s more nutritious)

  • Several cherry tomatoes sliced in half

  • A handful of shredded carrots

  • 1 stalk of celery chopped into thin smiles 😄

  • 2 slices of pre cooked bacon chopped

  • 1 hard boiled egg, sliced or chopped

  • Other options to add or enhance your salad - cheese, onions, strawberries or apple slices, dried cranberries, nuts or seeds, croutons, chicken, fish or steak. The skys the limit with salads… but be sure to keep it healthy. 

  • Remember this salad is to promote magnesium in the body so sticking to the basic ingredients is best. (ie; spinach and ginger)

Directions:

  • It’s simple: Chop, dice, cut up all ingredients and place in a bowl.

  • Add desired amount of dressing and use tongs or two forks to toss until satisfied with the coating. 

  • Enjoy the benefits of a cool salad on a hot summer day! 

Sautéed Spinach (serves 2… maybe? It’s so good you will be fighting over it)

  • 1 package of organic spinach or a huge bunch of homegrown spinach (If you have ever cooked greens you know how much they cook down so more is better!)

  • 2-6 garlic cloves peeled and chopped. We love garlic! No vampires here!

  • 2 Tbsp. of Avocado oil

  • S & P to taste

  • Optional, a few dashes of cayenne pepper 

Directions:

  • Heat a deep fry pan with oil and add garlic. Cook till it smells up the whole kitchen, YUM! 

  • Add fresh spinach and cover for 3-5 minutes. Use tongs to gently mix greens around to cook evenly. 

  • Once wilted, uncover and cook till the leaves are silky. 

  • Serve right away while it’s hot, and enjoy!

Fun & Fresh Watermelon Spritz (serves 1-2)

  • 1 cup of cubed fresh watermelon

  • Juice a ½ lime

  • ½ cup filtered cold water

  • Option to add fresh mint or basil leaves for a fun freshness!

  • 1 can of sparkly water or club soda

Directions:

  • Place ingredients into a blender (Except sparkly water! You will have a mess if you add bubbles to a blender) Blend till smooth

  • Choose a fun glass or cup, add a few cubes of ice

  • Pour about ¼ of the watermelon puree into glass

  • Top with sparkly water, and enjoy! 

  • You will be refreshed and hydrated, relieving those summertime headaches or feelings of low energy.
